ON THE TERRASSES DU LARZAC
THE WINE ESTATE
25 HECTARES IN THE HEART OF THE ANIANE TERROIR
A family Estate
Domaine Croix de Saint-Privat is a family estate with Olivier Ferrié representing the fifth generation. He took over the estate in 2001, succeeding his father and grandfather.
The aim is to produce wines that are true to their terroir, with a strong ecological approach, minimizing interventions both in the vineyard and in the cellar. We are unwavering in our primary goal: the sustainability and long-term preservation of our terroir for future generations.
Upon completing his studies in viticulture and oenology, it was an obvious choice for him to work in the most environmentally respectful way.
The estate covers 25 hectares of clay-limestone soils with triangular gravels and rounded pebbles. The Aniane terroir is located 30 km northwest of Montpellier, in the heart of the garrigue, near the tourist village of Saint-Guilhem-le-Désert.

ASSERTING THE IDENTITY OF OUR TERROIR
AOP Terrasses du Larzac
The Terrasses du Larzac is a relatively recent appellation located in the middle Hérault Valley.
This area has a continental climate with a higher average rainfall level (800 mm/year), while still benefiting from a Mediterranean climatic influence.
The vineyard is located at the foot of the Larzac plateau. The plateau rises to an altitude of 250 meters. This elevated plateau influences the climate, particularly in its northern part, where it is not uncommon to experience a day–night temperature difference of 20°C in summer.
In July, for example, daytime temperatures can reach 35°C. At night, as cool air descends from the plateau, temperatures can drop as low as 10°C.
The Terrasses du Larzac is one of the areas in the Languedoc where temperature variations are the most pronounced.
The appellation was officially recognized by the INAO National Committee on June 26, 2014.
